A taste of Summer - Vegan Style

I swear...Every weekend from the time we decided to become Vegan I have hosted a BBQ at our house that was filled with burgers, hotdogs, pasta salad, potato salad and some delicious dessert we couldn't eat. I clearly didn't think this through when agreeing to host.
I'm not going to lie. The smell of the cheeseburgers on the grill was enough to make my mouth water, but we were strong. I proudly put our veggie burgers on the grill. Topped them with some vegan mayo, ketchup and a side of roasted veggies and tried not to focus on what we weren't eating.
But after the first BBQ I decided to get a little smarter. What I'm learning (by trial and error) is that I can take most recipes and make a "vegan version". As the weeks go by I'm getting more and more creative. If you're scared to go Vegan because you're not sure what to make Pinterest will be your best friend. I don't follow recipes, but it's been great for giving me ideas.
One of my favorite Vegan creations so far is vegan potato salad. Now, clearly I'm not the "creator" of this... there are lots of recipes out there. This is just what I've put together that has turned out to be a pretty big hit!
Like I said...I don't follow recipes. So bare with me on my ingredient list :)

Ingredients:
Potatoes (I like to use baby red potatoes because I'm too lazy to peel them) :)
Vegan Mayo (So far my favorite is Hellmann's vegan mayo)
Dill pickles (whatever you have in your fridge)
Celery
Sweet Onion
Salt
Pepper
Paprika
Mustard
Directions:
-- Dice and boil the potatoes (I like to throw a clove of garlic in my pot of boiling water to add a little extra flavor. Just make sure it doesn't end up mixed in the salad)
-- Chop pickles, onion and celery (the amount is really up to you and how crunchy you want your salad. If I use half a bag of potatoes then I use about 2 pickles, 1/4 onion and 2 stalks of celery)
-- Once potatoes are cooked (stab with a fork to make sure they're done). Drain the water and run under cold water
-- Mix potatoes, pickles, celery and onion together.
-- Season with salt, pepper and paprika to taste (sorry this isn't more helpful)
-- Add 2-3 big spoonfuls of mayo :) and a squirt of mustard
-- Mix it all together, refrigerate and enjoy!
